What size corporate events does Puff ‘n Stuff cater? We can go as small as just a couple of people, if that is what the client wants.  We can also go as large as 6,000-7,000 people. We did a grand opening to Target, it was a back to school for UCF.  What we did is that we partnered with Target, while they provided the food, we prepared it on-site. It was a nice spin on what we normally do, but we can cater for corporate events as large as the client would like.

I think with Corporate Executives, I give them what is going to work well with their clients, especially if they don’t know the group of people that are coming in.  They don’t know if they have dietary restrictions, etc.

What I try to do is say this menu works really well and ease them into it.  If there are dietary restrictions we can talk about menus that work well for them.  I can also do site visits and walk them through how the event is going to go, to help ease their mind. I think that gives them a sense of calm.  Once we do a lunch delivery, and we bring repeat business,  we have it, they feel comfortable with us.  If they set  a new location, we go and walk it to make sure we understand the location.

We are flexible, if you don’t have tables and access to your meeting requires going up five flights of stairs, we will accommodate your request to make your event the best possible.

We recently assisted a well known hotel client to produce the “welcome” course for a 2,100 person gala dinner. After countless hours of detailed preparation we were able to answer the question: what happens when you combine…

  • 6,300 precision cut pasta sheets with the word “Welcome” written in 3 languages stamped in squid ink
  • 1/4 mile of vegetable mousse in 3 flavors (pea and mint, cauliflower and anise, sweet potato and cumin)
  • 25 gallons of roasted red pepper coulis
  • 10,000 grape tomatoes carefully scored, roasted, peeled and dehydrated to look like an open flower
  • 8,400 fava beans husked, peeled and split
  • 8,400 purple cauliflower florets
  • 2,100 elephant garlic chips
  • 2,100 basil crisps

“With a lot of the clients if they have corporate business meeting coming in and they need lunch everyday from a Friday, Saturday, Sunday we can do that.  We can do breakfast, lunch, and afternoon snacks.  A lot of times they don’t have time for their clients to go out and have a lunch break. It’s just easier for us to go in there, it keeps them there, you don’t have to worry about them getting back. So that makes it that much easier for the client, you can keep them all in one space.  We can do anything that’s small.  I’m doing something this week, they wanted something nice and are doing VIPs for six people.  So nothing is too small for us, whatever your needs are, we will try to accommodate you for any kind of event.”

  1. Don’t place an order for the full group in a way that is not interpreted by the full group. One time a CEO determined we’d consume ‘family style’, entailing we would acquire a bundle of food, and we would all share.Trouble followed, he ordered in Chinese, and did not actually assure us non-Chinese speakers what he ordered. All the food was surprising. I detest surprises once it concerns my food. Do not articulate “Try it, you’ll like it”.I am not seven. Assure me what it is I’m about to eat, and do not be funny around it. I will be, to a lesser extent, mad if it is calamari and you assure me it is calamari, than whenever you assure me it is special shrimp and Iamb chomp into a suction cup. Not cool.
  2. Don’t try to talk about religious belief at a table full of people with wide-ranging backgrounds.
  3. Don’t try to talk over politics the least bit. Particularly when the discussion commences with the words “Your government”. Hey, last time I ascertained, you lived here as well, unless you’re commuting from Canada everyday.
  4. Do not make loud jokes about how attractive the women are. Seems sensible, considering as how there were women in attendance. And yet, it came about. I just put my head down and ate.
  5. Do not invite people to lunch, as a group, under the pretense of a company-sponsored excursion, then narrate it after wards they have eaten that “It adds up to $9 apiece” whilst you hold your hand out. Once they aforementioned “corporate lunch”, I naturally (and mentally) slipped the word “-sponsored” betwixt”corporate” and “lunch”, and was geared up to get my eat on free of charge. Nevertheless, acknowledging what I recognize about where I work, I also mentally prepared myself for the likeliness that I’d be amounting out of pocket. So I was prepared for it. And let down that I was once again proven right by these guys.

It’s almost that time of year again. Time to get together. Time to celebrate. And, of course, time to eat, drink and be very merry! There will be no Bah Humbug this year with Puff ‘n Stuff Catering’s new menus freshened up for this coming holiday season.

We have added some great new affordable hors d’oeuvres and Chef Attended Actions Stations that have been designed to suit your unique taste and budget. Some of our new items include a fabulous selection of savory butler-passed coronets. These little cones are filled with a variety of flavors — from Wine-Poached Chicken with Applewood-Smoked Bacon Crème Fraîche to Ginger-Soy Ahi Tuna Tartare with Five-Spiced Wasabi Crème Fraîche — and are sure to please your holiday guests.

The new Shabu Shabu Mongoglian Hot Pot Station is both vegetarian and meat-lover friendly and includes a variety of ingredients like napa cabbage, bok choy, shiitake and enoki mushrooms, carrots, onions, bean sprouts, snow peas, scallions and tofu – you can also add shrimp, pork chicken or sirloin.

As always, we have fantastic desserts to finish off any holiday gathering with some new pastries across the board and a new “S’mores Indoors” action station. And of course, our Executive Pastry Chef, Bruno Ponsot, has incorporated some of his traditional French favorites such as “Bouche de Noël”.
